If you're into spaceships, robots and what have you, try watching Mobile Suit Gundam. If you're into little dead girls that carry the dead to the next world and want a sobfest, watch Shinigami no Ballad.
There's just so much out there, it's hard to just say LOL WATCH THIS. I do recommend MSG, though, especially if you like robot animu. Otherwise, Legend of the Galactic Heroes is for you spaceship fanatics.

Appleseed (GothThug said in the lobby its got a 2cnd part now too)
Akira
The Hakkenden (Multi part series)
Princess Mononoke
Ghost In The Shell 1&2
Most Dangerous Soldier 1&2 (MDS, ive got the uncut original dvd with both movies, dunno if you can get thatone still)
And last but not anywhere least (do in fact love it) *Elfenlied*
Thats about my favourites, not in that order tho. Enjoy!
Ps.: Yes i have all those on original DvDs, the gore-ish ones in uncut and im praud of it

NightSpike reminds me... All of Studio Ghibli's movies are golden. Seriously.
They instill in you some sense of wonder as you watch a fairytale-esque story unfold right before your very eyes. It's both beautiful and mesmerizing, each and every single one leaving you with some food for thought after watching it. Of course, you only get the food for thought if you pick up on it; They're not rubbing it in your face, you can otherwise perfectly enjoy the wondrous scenery, characters and development of the story.

Appleseed 1 & 2 are definitely good movies to watch.
Bleach is alright, getting the same way as Naruto used to be. Naruto was crap, Naruto Shippuuden is ok.
Trigun and Cowboy Bebop are two I highly recommend, along with Eureka Seven (one of my favourites, just for the all-rounded-ness).
Last Exile is another ok anime.
Kiba's worth watching, deffinately one of the better ones.
Lastly, Great Teacher Onizuka - worth your time.

Akagi and Kaiji, if you like watching people bet their lives playing games.
Best narrator's voice ever, as well.

Hellsing.
Nothing better than nazi vampires invading england as they crash SR 71's into aircraft carriers and the dead roam in armies.
